As a type of dried anchovy, a specialty of Vietnam, specifically... anchovies (Also known as anchovy, milk anchovy, or mouth anchovy). This is the smallest type of anchovy, about 3cm long, with translucent, silvery-white flesh and soft bones that can be eaten whole. Suggested recipes (very appetizing with rice!)
Crispy fried and ready to eat: Rinse briefly, drain, and fry until golden brown.
Sweet and sour braised fish/braised peanuts with lime leaves: Best with anchovies because they stay crispy for longer.
Braised pork belly: Add pork belly, garlic, chili peppers, sugar, and fish sauce.
Fried egg: Fry the fish first, then pour the egg mixture over it.
Make mango salad or mango sour soup.
